I LOVE COCONUTS. 

You could say that I am nuts for coconuts. I think its amazing that I can go to the grocery store and pick up a fresh coconut that has been flown all the way from thailand for just one dollar. We are so lucky to love in a society where that is possible. 

I drank the coconut water and scooped out the meat with a spoon. Use a large meat cleaver or machete to whack a large triangle shape out of the top. 



Ribboned Asparagus Spears with Radish, Cucumber, Bell Pepper, Green Onion, Mixed Sprouts, Dried Cranberries, Dried Blueberries, and Homemade Lemon Tahini Dressing 

*** I absolutely hated this salad. I have seen ribboned asparagus salads several times and they always say that it tastes delicious and it always looks amazing to me.  Apparently I dont like raw asparagus, no matter how finely ribboned. I thought it tasted terrible and ended up throwing the whole thing in the trash. I felt really bad considering all of the other ingredients and how long it took to ribbon 8 asparagus spears but it literally made me feel nauseous. I dont think I’ll be able to eat asparagus for a wile. This was very disappointing, I really thought I would love it. EW!!!

I thought I would upload it anyway though, I did spend some time on it. If you are considering making ribboned asparagus be sure to test out a bit first before you ribbon a buch of asparagus. 

To “ribbon” asparagus is to basically take a vegetable peeler to it until there is nothing left. 



Kale Salad with Radish, Apple, Cucumber, Dried Cranberries, Dried Blueberries, Kalamata Olives, Quinoa, and Honey Dijon Vinaigrette served with Sliced Minneola  Tangelo and Annie’s Bunnies Honey Wheat Pretzels

I’m sorry about all of the kale salad. I just love kale. Mmmmhhhmm I’m going to catch up on some Are You there Chelsea? and eat my dinner :]



I froze the rest of that last batch of miso soup. This is how I make it easy for myself when I’m hungry and dont want to cook. Take that Annie Chung and your miso noodle bowls! 



Kale salad with Cucumber, Mini Bell Peppers, Carrot, Apple, Sliced Minneola Tangelo, Sliced Almonds, Dried Blueberries and Home Made Honey Dijon Vinaigrette

I tossed everything together then decided to top it with some sliced Minneola Tangelo and extra Dried Blueberries. YUM. 



Miso Soup with Celery, Broccoli, Carrots, Radishes, and Green Onion

This was incredibly easy to make. Make miso soup if you are short of time or just feeling lazy ;]

literally all I did was: 

1) boil water

2) add veggies, reduce heat, cook until desired tenderness or about 10 minutes

3) add miso (1/4 cup for ever 6 cups water)

4) serve! 

Ideally I would make this with tofu, noodles, and seaweed, but I was craving miso, so I made it with what I had on hand. It was delightfully easy! I’ll make it authentic next time. 

You can find miso at an asian market or health food store. I got mine at Sprouts.

So easy and so good! :]



Marinated Kale & Purple Cabbage, Cucumber, Red Cherrie Tomatoes, Yellow Cherrie Tomatos, Apple, Dried Cranberries, and Pecans in a Lemon Balsamic Vinaigrette

A kale salad takes just a few more steps to prepare than your typical green salad but this tasty superfood is well worth it.

1) Tear the kale away from it’s tough stems. Discard stems and put kale in a large bowl.

2) Sprinkle with a dash of salt and massage with hands for 1-2 minutes.

3) Choose a dressing that includes vinegar or lemon to help break down the tough skin. Toss kale and let marinate in the fridge for a minimum of 30 minutes before you eat. Marinated kale keeps well for up to 3 days. 

You are left with tender and delicious kale :] 



TJ’s Masala Burger on whole wheat bread & vegenaise with sautéed red and orange bell pepper, yellow and red cherrie tomatos, onions, garlic, and topped with fresh cilantro. 



Door keys pretty much all look the same so when you have them made usually its smart to shell out that $1.79 on those colored plastic rings, so you know what each key is for. I however, prefer to paint my keys with nail polish. It effectively distinguishes the keys all wile making them look pretty. 

When painting the keys, I find it easiest to let the painted part of the key hang over the edge of a table or book, wile the other toothed end is secured (I used larger polish bottles but anything would do). This way you can paint both sides at a time and is much faster than painting one side at a time, letting dry between adding coats of polish and flipping from side to side.

I used 2 different nail polish colors for each key because I wanted mine to have both color and glitter,as well as be distinctly different from each other.

The finished product! On my poor mangled but faithful Louis Vuitton keychain. My keys bring a smile to my face every time I open my door!
